To quote British Chef, restaurateur and TV Chef, Gordan Ramsay, "If you want to become a great chef, you have to work with great chefs". With this in mind we have gathered together a carefully selected brigade of our talented Chefs from around Exclusive Hotels and Venues as well as gifted and brilliant local chefs, producers and experts. All of whom are passionate about sharing their knowledge and skills with like minded people.

Andy Mackenzie, Executive Chef for Exclusive Hotels and Venues Chefs' Academy

Andy has earned the titles of Local food champion & A Hampshire Life Food Hero. He has been a chef with Exclusive Hotels and Venues for 32 years.

Sylvain Gachot, Cookery School Manager at SEASON 

Sylvain joined the brigade of chefs at Lainston as demi-chef de partie and worked hard over four years to become sous-chef and then after a further two years gaining valuable experience, he became Cookery School Manager in 2015.

Nicolas Bouhelier, Head Pastry Chef at Lainston House

Nicolas is head pastry chef at Lainston House. He was part of the "UK pastry team" for the World Pastry Cup 2013 Competition or chocolate design and plated dessert obtaining 9th place.

Matt Worswick, Head Chef at The Latymer, Pennyhill Park

Matt Worswick has worked in some of the UK’s best restaurants, earning a Michelin star by the age of twenty-six. He now cooks bold, hearty plates with fantastic flavour and holds a Michelin star at The Latymer.

Lewis Hamblet, Executive Chef of Camellia at South Lodge

Starting with a catering course in his hometown of Bolton, Lancashire, he gained valuable experience at London’s renowned Savoy Hotel as well as Amberley Castle.

Sarah Frankland, Head Pastry Chef at Pennyhill Park

Winning numerous awards during her career, including the Academy of Culinary Arts Awards of Excellence in Pastry in 2008, in 2012, an Acorn award by The Caterer magazine recognising 30 chefs under 30 for their work in the hospitality industry and most recently came second in the UK selection for World Chocolate Master.

Leyre Pedrazuela Otero, Head Pastry Chef at South Lodge

Leyre has a remarkable pastry background, she has worked in both England and Spain in pastry shops including Laduree, Escriba and Mama Framboise and Hotels including; Mandarin Oriental and Pennyhill Park. Leyre was most recently a finalist on Bake Off: The Professionals 2019.

Jamie Brown, Executive Chef at The Royal Berkshire

Jamie joined Royal Berkshire in 2013 but has worked for Exclusive Hotels and Venues for over 11 years including time at Pennyhill Park and Fanhams Hall before becoming Executive Chef at Royal Berkshire.

Paul Bray, Executive Chef at Fanhams Hall

After qualifying in 1988, Paul began his culinary career working at the Heathrow Penta and was soon promoted to Chef Tournant.

Rob Potter, Executive Chef at The Bybrook, The Manor House

Executive Chef, Rob Potters currently holds a Michelin star at The Bybrook restaurant at The Manor House. He has over 15 years’ experience working at a number of critically acclaimed hotels and restaurants across the UK.

Alex Payne, Chef at The Latymer, Pennyhill Park

Previously working with chefs Gordon Ramsay and Heston Blumenthal, have led to a modern classical cooking style which can be seen throughout Alex’s dishes. Since working with Matt Worswick at The Latymer, his confidence in his cooking has thrived and he was recently a contestant on BBC’s MasterChef: The Professionals 2018.

Having worked as a vegan chef, culinary teacher and restaurant manager, Mitch is the founder of UK-wide plant-based food brand “Mitch’s Kitchen”. His knowledge around vegan and gluten-free principles has earned him endorsements from Vp0egan Living Magazine along with a roster of high profile celebrity clients whom Mitch has taught privately.

Whilst Mark was head pastry chef at Lainston House, an Exclusive Hotel, Hampshire he became UK Chocolate Master 2006-2010 and is now Squires Kitchen’s Master Chocolatier and resident tutor.

Fabricio has worked in award-winning restaurants, including the Michelin-starred Devos in Belgium and the Talbooth in East Anglia and, more recently in several cookery schools in London teaching alongside several celebrity chefs.

Jon Jenkins, Great British Bake Off 2018 

Jon Jenkins won the hearts of thousands of viewers during the Great British Bake Off 2018 series, baking a variety of Welsh bakes most weeks. Since then Jon has had the worked for the BBC as part of Children in Need, on BBC Radio Wales as part of Foodie Friday.
