To quote British Chef, restaurateur and TV Chef, Gordan Ramsay, "If you want to become a great chef, you have to work with great chefs".
With this in mind we have gathered together a carefully selected brigade of our talented Chefs from around Exclusive Hotels and Venues as well as gifted and brilliant local chefs, producers and experts. All of whom are passionate about sharing their knowledge and skills with like minded people.

Nicolas Bouhelier, Head Pastry Chef, Lainston House, an Exclusive Hotel

Nicolas is head pastry chef at Lainston House, an Exclusive Hotel and part of Exclusive Hotels and Venues. He was part of the "UK pastry team" for the World Pastry Cup 2013 Competition or chocolate design and plated dessert obtaining 9th place.

Paul Bray, Executive Chef, Fanhams Hall, an Exclusive Venue

After qualifying in 1988, Paul began his culinary career working at the Heathrow Penta and was soon promoted to Chef Tournant.

Jamie Brown, Executive Chef, The Royal Berkshire, an Exclusive Venue

Jamie joined Royal Berkshire in 2013 but has worked for Exclusive Hotels and Venues for over 11 years including time at Pennyhill Park and Fanhams Hall before becoming Executive Chef at Royal Berkshire.

Nicky Cottis, Sous Chef, The Royal Berkshire, An Exclusive Venue

Nicky joined the pastry team at Pennyhill Park as Commis Chef straight from college and through hard work, passion and dedication made her way up to Sous Chef working under Executive Chefs Karl Edmunds, Andrew Turner and David Campbell.

Steven Edwards, Creator of ETCH & Winner of Masterchef: The Professionals 2013

Steven Edwards rose to TV chef fame upon winning BBC2’s MasterChef: The Professionals in 2013 when he was Head Chef of The Camellia restaurant at South Lodge, an Exclusive Hotel, Horsham, West Sussex and part of Exclusive Hotels and Venues.

Sylvain Gachot, Cookery School Manager

Sylvain joined the brigade of chefs at Lainston as demi-chef de partie and worked hard over four years to become sous-chef and then after a further two years gaining valuable experience, he became Cookery School Manager in 2015.

Lewis Hamblet, Executive Chef, South Lodge, an Exclusive Hotel

Starting with a catering course in his hometown of Bolton, Lancashire, he gained valuable experience at London’s renowned Savoy Hotel as well as Amberley Castle.

Jackie Kearney, Masterchef Finalist 2011

Jackie Kearney was a top 4 finalist in BBC One's MasterChef 2011 and runner up for Best Main Dish at British Street Food Awards in 2012. Her food passion lies with world street food, and vegan and vegetarian dining.

Edd Kimber, Great British Bake Off Winner 2010, TV Personalitiy & Food writer

Edd is a baker and food writer who writes for the UK's leading food magazines. He is the author of three best-selling cookbooks The Boy Who Bakes, Say It With Cake and his latest Patisserie Made Simple, a guide to the intricacies of French baking.

Beca Lyne-Pirkis, The Great British Bake off Finalist 2013

In 2013, Beca was one of the baker’s dozen in the 4th series of The Great British Bake Off. She quickly gained a following due to her homely style of baking as well as her warmth and humour with the other contestants.

Andy Mackenzie, Executive Chef, The Exclusive Chefs Academy

Andy Mackenzie has been a chef with Exclusive Hotels and Venues for over 27 years.

Sue Meader, The Cake Lady

Sue started decorating her birthday cakes for her children when they were very young as she couldn't afford to buy them. In June 96 She had the opportunity to purchase The Cake Lady. Since then the business has gone from strength to strength.

Harriet Mitchell, Chef de Partie, The Bakery, Pennhill Park, An Exclusive Hotel and Spa

Torquay born and bred, Harriet, at her own admission, realised from an early age that she was obsessed with food considered a job in the catering industry to be her perfect job.

Olly Rouse, Executive Chef, The Avenue, Lainston House, an Exclusive Hotel

Olly has a tireless obsession for seeking out ingredients he considers special and firmly believes that a chef is a ‘custodian of nature’s larder’. Olly is keen to celebrate British and grows his own produce in the hotel’s abundant kitchen garden.

Mark Tilling, Master Chocolatier, Squires Kitchen

Whilst Mark was head pastry chef at Lainston House, an Exclusive Hotel, Hampshire he became UK Chocolate Master 2006-2010 and is now Squires Kitchen’s Master Chocolatier and resident tutor.

Jennifer Williams, Founder of Naked Jam

Jennifer Williams is an artisan jam maker dedicated to producing conserves of the highest quality where the flavour of the fruit is the most important ingredient.

Stu Henshall, The Great British Bake Off contestant 2015, Food Demonstrator and Presenter

Since being a contestant on TGBBO Stu Henshall set up the increasingly popular website www.TheAlternativeKitchen.net. Stu has made the move from touring musician to food demonstrator and presenter. Who said food can’t be rock’n’roll?
