Steve Smith is widely regarded as one of the most inventive and gifted chefs of his generation. Renowned for his modern British cooking, founded on using the finest seasonal ingredients available. Steve has held a Michelin star for the last twenty years, also earning Five AA Rosettes, 8/10in the Waitrose Good Food Guide and winning a Catey Award for Chef of the Year in 2014. Steve started his career in the kitchen of Jean Christophe Novelli, before going on to work with Shaun Hill, Paul Heathcote and Simon Gueller.

Restaurant Manager Charlotte Besson

Originally from Saint Etienne, in France. Charlotte moved to England in 2016, after graduating with an MBA in Hospitality Management from the Vatel Hospitality Business School in Lyon, including undertaking an internship of 6 months at Gravetye Manor in Sussex. After graduating, she took her first full-time position as a Maitre D’ at Alexander House Hotel in Sussex. She was then offered a position as Senior Head Waiter at the Iconic Cliveden House Hotel in Berkshire. In April 2018, Charlotte joined the Exclusive family as Assistant Restaurant Manager of Latymer, before becoming Restaurant Manager in 2020. Charlotte is dedicated to driving excellence in the service, providing training to her team and to add the personal touch to your experience.

Head Sommelier Aurel Istrate

Originally from Romania, Aurel moved to England in 2009, after graduating The University of Psychology, finding his calling in wines. Further to WSET wine courses in London he became a Commis Sommelier at a Small Luxury Hotel before pursuing his career as a Sommelier at Joel Robuchon London.  He then spent four years as a Sommelier at the iconic Connaught Hotel in London’s Mayfair, before joining the Exclusive family in October 2019 as Head Sommelier of Latymer. Aurel is constantly improving and changing the wines, always striving for the ‘Perfect Pairing’.
