Head Chef, Steve Smith

Steve Smith is widely regarded as one of the most inventive and gifted chefs of his generation. Renowned for his modern British cooking, founded on using the finest seasonal ingredients available. Steve has held a Michelin star for the last twenty years, also earning Five AA Rosettes, 8/10in the Waitrose Good Food Guide and winning a Catey Award for Chef of the Year in 2014. Steve started his career in the kitchen of Jean Christophe Novelli, before going on to work with Shaun Hill, Paul Heathcote and Simon Gueller.

Restaurant Manager Pedro Carvalho

Originally from Aveiro, in Portugal. Pedro moved to England in 2013, after finishing his studies in Hospitality Management from the School of Hospitality and Tourism in Porto, including undertaking an internship at the multi award winning and Michelin starred The Yeatman Hotel. After moving to England he took his first Restaurant Manager position in the New Forest. He then moved to the Channel Island where he first worked with Steve Smith at Bohemia Restaurant, however his time there was cut short to go to Switzerland to pursue with is studies and graduating from hi BA Honours in Hotel and Tourism Management. Moving back to England Pedro went back to work in the New Forest and then moved to Salcombe.

Joining Exclusive family in 2019 at The Manor House he dedicated his time providing training to his team. When the possibility to join the Latymer team became an option is was a easy decision for Pedro and now he is now adding his personal touch in driving excellence service to the guest experience.

Head Sommelier Sergio Dos Santos

Originally from Brittany in France, Sergio has previously worked in Michelin Starred restaurants such as the two starred Hotel Million in Alberville, Savoie and the Hotel Majestic Villa des Lys in Cannes. Sergio has a level 4 diploma in WSET (Wine & Spirit Education Trust) a Sommelier Caviste diploma from France and was also a 'UK Sommelier of the Year' semi-finalist in 2006, 2010, 2011, 2012 and 2018. Sergio love creating living wine lists which will evolve continuously, showing the wine characteristics of each region and how they differ from each other. Selecting, organic biodynamic and organic wines from emerging wine locations to the more traditional and classic areas. Food and wine matching is culinary pleasure for Sergio who is always striving for the perfect for the ‘Perfect Pairing’.
