Head Chef, Roman Zalaba

Roman was born in Prague where his love of food began, he moved to the UK in 2004 in pursuit of his career, training and enhancing his passion for great food. He joined The Brasserie having gained a wealth of international experience as well as working in a traditional country house in England. Roman has a great depth of knowledge and uses innovative ideas to develop new dishes for the menu.

Roman insists on the highest of standards and concentrates on putting his own personality into the food he creates. The menus are unpretentious but elegant with an emphasis on British and European classics and flavours, utilising the abundance of fresh produce from the surrounding area.

Roman says "I am delighted to be a part of a hotel and restaurant that share the same ethics as me; our menus evolve with the seasons, offering the best in local and seasonal produce where possible. I offer some of my favourite dishes utilising both classical and modern techniques. I am pleased to be working closely with the whole team to match the quality of the food to the surroundings and create something really special.”


Roman believes that a great dining experience is finding the perfect balance of excitement, fine-tuning, professionalism and warmth. Experiencing original cuisine that reflects the passions of the chefs inspires him.
