Woodfired cooking: Authentic breads and pizza

After enjoying a welcome cuppa and pastry with your fellow classmates, your day will be filled with understanding the behaviors of different woodfired ovens, from a steel alfa to brick built bushman and stone back ovens. Discover the different wood that are used for these ovens and how to prepare and light your oven for the best results.

You will learn the science behind dough to gain an understanding on how it behaves and the correct ingredients to use. You will master the techniques of proving, hand shaping and moulding to create the perfect breads and pizza under the expert eye of your chef for the day who will lead demonstrations before it's your turn to get cooking.  Once you’ve mastered the dough it’s all about the pizza toppings and the secret is less is more to create the perfect balance for the best texture and taste of a traditional Neapolitan pizza. The fun doesn’t end there; gather your seasonal veggies, picked fresh from our kitchen garden to prepare a delicious beetroot grissini dip, as seen in The Wellhouse restaurant.

No need to be a cooking connoisseur here…the class is relaxed, fun, informative and interactive, suiting all abilities. Sharing an oven  between two (if you come on your own we will pair you with a classmate), we will work together through the preparation and cooking of each dish, then you can enjoy the fruits of your labour, whilst our cleaning wizards do their magic and hey presto - your cooking station ready for the next dish!
