How to make the perfect roast potatoes
Christmas is all about dinners that impress your guests, so today we are bringing you how to make the perfect roast potatoes from our wonderful Camellia kitchen chef brigade at South Lodge, an Exclusive Hotel.
Before we start
Time to prepare: 10 mins, Cook time: 50 mins Serves: 4
Ingredients: 6 Red Rooster potatoes, 4 pieces of thyme, 2 tbsp butter, olive oil and pinch of sea salt
Tools: Chopping board, knives, sauce pan, spoons, frying pan and baking tray
Step 1: Start by preheating the oven to 190C. Using Red Rooster potatoes, begin peeling your potatoes by chopping off both ends.
Step 2: Cut the potatoes in half.
Step 3: Peel all potatoes, ensuring that all are roughly the same size.
Step 4: Put your potatoes into a sauce pan, bringing the water to the boil for about 20 minutes, checking with a knife along the way until cooked through.
Step 5: Drain the potatoes and leave to dry until the steam is gone.
Step 6: Add a spoonful of butter to the pan and a splash of oil, this ensures the butter doesn't burn.
Step 7: Once sizzling, add your potatoes and start spooning over the butter and oil mixture over the potatoes until slightly more golden.
Step 8: Place the fried potatoes with the butter and oil mixture, thyme and a sprinkle of salt onto an oven tray
Step 9: Bake the potatoes at 190C for 25 mins or until crunchy and golden.
Perfect for serving with turkey or a roast dinner.
