The best Boxing Day recipe

Turkey Curry

Time to prepare and cook: 50 mins Serves: 4

Ingredients: Any left over turkey or chicken, 1 teaspoon of butter, 1 courgette, 1 aubergine, 2 onions, 1 potato, 10g cumin seeds,10g fresh ginger,10g fresh garlic, 2 whole chillies, 20g turmeric, 10g chilli powder, 10g cumin powder, 10g ground coriander, 10g garam masala, 300g chopped tomatoes and 20g coriander

Tools: Pan, Food processor, chopping board, knives, teaspoons

Method

Step 1: Cut up the left over turkey or chicken into cubes. Seal and marinate in all spices (if not already cooked)

Step 2: Add a teaspoon of butter into a pan with cumin until it sizzles. 

Step 3: Chop the onions, chillies, ginger and garlic cloves before you add them to the pan to caramelise onions and sauté the garlic and ginger before adding in the chopped chillies.

Step 4: Once caramelised, add the chopped tomatoes before blending in a food processor until smooth.

Step 5: Add the cut up courgette, aubergine and potato into the mixture, mix together and heat in a pan.

Step 6: Whilst the mixture is cooking, add turmeric, red chilli powder, cumin and salt.

Step 7: Add your turkey or chicken and let the mixture simmer until the vegetables are cooked through.

Step 8: Lastly add coriander and garam masala.

Serve with your choice of rice and naan bread.

Potato and cauliflower curry

Time to prepare and cook: 40 mins Serves: 4

Ingredients: 1 teaspoon of butter, 2 cauliflowers, 1 onion, 1 potato, 20g cumin seeds, 20g Fresh Ginger, 20g Fresh garlic, 1 whole chilli, 20g turmeric, 5g chilli powder, 10g cumin powder, 10g ground coriander, 10g garam masala, 300g chopped tomatoes and 20g Coriander

Tools: Pan, Food processor, chopping board, knives, teaspoons

Method

Step 1: Add a tea spoon of butter into a pan with cumin until it sizzles. 

Step 2: Chop the onion, ginger and garlic cloves before you add them to the pan to caramelise onions and sauté the garlic and ginger before adding in the cut up chillies.

Step 3: Once caramelised, add tomatoes in before blending in a food processor until smooth.

Step 4: Add chopped cauliflower and potato into the mixture, mix together and heat.

Step 5: Whilst the mixture is cooking, add turmeric, red chilli powder, cumin and salt.

Step 6: Let the mixture simmer until the vegetables are cooked through. 

Step 7: Lastly add coriander and garam masala.

Serve with your choice of rice and naan bread.
