Party season canapés for beginners
Goats cheese and black olive Crostini
Time to prepare: 15 mins; Time to rest: 5 mins; Total time to cook: 5 mins
Ingredients: 1 ciabatta roll or the bread of your choice e.g. baguette, 120g fresh goats cheese, 1 lemon, 50g olives, olive oil, salt and pepper
Tools: Sharp knife and chopping board, Oven tray, Mixing bowl
Method
Step 1: Cut the ciabatta roll into 0.5cm thick slices, sprinkle some salt and drizzle a little olive oil over the cut slices.
Step 2: Cook in the oven at 200 °C until crispy and golden.
Step 3: Chop the black olives, zest some of the lemon and mix gently with the goat cheese in a mixing bowl. Make sure to try it along the way when combining all ingredients.
Step 4: Dress the goats cheese mix onto the crostini and decorate with micro herbs.
Method
Step 1: Heat butter in pan on low heat
Step 2: Top and tail, peel and dice the carrots
Step 3: Move onto the lemon grass. Top and tail it, remove the first layer and dice it
Step 4: Use half an onion, remove its tough outer layer and dice onion
Step 5: Stir together your cut up ingredients into a pan with butter and simmer on a low heat for 20 mins or until soft
Step 6: Once your ingredients have been cooked soft, put the mixture into blender with 200ml of double cream and blend at high speed until very smooth, then pass the mixture tough a sieve
Step 7: Lastly place the sieved mixture into a whipped cream dispenser and serve into glasses of your choosing.
